I'd say that they're not so much of a dying breed as you might think, a lot of big saloons, performance cars, 4x4's etc run V8's Things like the Hemi in Chrysler 300C's run on 4 cyl when just driving normally, then fire on all 8 when you floor it which means they're surprisingly fuel efficient.
Land Rover are using a 4.4 V8 diesel in the 2011 Range Rover, better economy and lower emissions than say the 4.4 BMW V8 that's in mine.
I really hope V8's don't get killed off, I love them, I'm onto my 2nd V8 now, first was twin turbocharged and was brutal, and the N/A V8 in the Range Rover provides a seamless amount of torque and mid range grunt that I doubt a V6 would provide.
