With a drilled airbox and K&N filter I'd go either AAA or AAM

You sure the "shiney" manifold you have won't fit your carb, the minispares one says suitable for HS4 , HIF38 / HIF44.

Yeah it won't fit, its got a large square hole and not a round and oval hole lol its also got a screwthreaded hole in the intake that mine doesn't have.
This is what I have got:

Im unsure how I would be able to fit this:

Is there a conversion kit or a spacer or an adaptor or something?

Inlet Manifold - Alloy - Water Heated - HS4/HIF44
The HS4 / HIF44 is a bit of a clue it will fit both, you have an HS4

Manifold with spacer next to it, the spacer is standard on your original set up or should be.
The studs on your existing manifold unscrew, and you screw them in as shown below to your new manifold
On the last picture should be a plate between the spacer and carb that holds the airfilter and throttle and choke cable

I've no idea what DPE stands for, somebody probably will

aahh right I take it you have non servo brakes, well if your manifold as the servo port, it needs blocking with a grubscrew.

We brought a 2nd hand engine last year, that manifold came with it, but it didn't have the vacuum take off port for servo brakes, so we swapped it for a MG Metro manifold (supposed to be one of the best)

I think I found that they did a CFM test, the MG metro manifold came 2nd to the flow of the minisports one, but I guess its better than the OEM one, even though the OEM one is cast iron so does absorb heat, with is good for fuel atomisation (to a point) Just means I need to get that grub screw and an AAA needle

by the way...it doesn't fit!....

Oh wait...wrong carb

Oh and before you ask the pipe running through the casting is for heating the manfold, some people connect them others don't. I haven't personally.
Im guessing is the same reason as having a hot air feed into the air filter

I will try and take a photo of the cylnder head when the inlet manifold is off, its quite tight back there, but I might be able to show the porting that has been done.

I am still running on the original inlet manifold, I have a minisport manifold to fit, how much difference would it make in fitting that? Should I go out and buy an AAU needle as well?
When I pull the choke out it goes VERY rich and stalls if I hold it all the way out
Also, after the hill I pulled the choke, then put it back in again and I got all the power back and it became drivable again

You did reset the mixture after fitting the new needle ??

I suppose your spark plug are black. See if they get brown, that means you're running approximately right. If it doesnt work, get hold of an AAU needle.
Again, if engine keeps stalling and strugglin, turn off engine, remove dashpot and piston and have a look around the jet if its full of fuel spread all round, if so you probably having issues with the float needle valve, which maybe stuck, clogged or simply needs adjusting.
